With just as much enthralment, he also oversees the fascinating evolution of the wines in the barrel and the bottle: he is a supporter of the theory of non-intervention on the wine, so as to ensure that the characteristics deriving from the grape remain intact.For several years his most important red wines have not been filtered, so as to avoid subtracting precious components from them.
He coordinates the most important technical decisions and actively participates in the tasting of the wine during their development stages. |
